Chef Howard: #EatInPopUp Tasting No. 2
Remember Chef Howard? We closed out 2015 with a great #EatInPopUp tasting in Brooklyn, for which he was the chef. We enjoyed his cooking so much that we brought him back for another one! Our hosts, Nadia and Stu, and their guests were treated to a very special menu in which Chef Howard showcased the extent of his creativity and culinary skills. Each dish was carefully-crafted and utilized ingredients in unique ways. Keep reading for more about our latest #EatInPopUp!
Tartare is usually made with steak or tuna, along with an egg yolk. Chef Howard’s first course this evening instead used compressed watermelon and mango! Based on looks alone, this dish could’ve easily fooled many diners. However, the flavor was unmistakably summery and light, unlike your typical tartare.
The second course was a forest mushroom risotto, served in a Parmesan cheese bowl. The risotto itself was a big hit, but serving it in a bowl made of cheese was a special touch that wowed many of the guests that evening.
For the guests with dietary restrictions, the second course was a delicious snap pea salad with lemon vinaigrette.
For the grand finale, Chef Howard prepared skate with fennel-onion “confit” and an olive tapenade. He also made a sauce using lemon, butter, thyme, and other aromatics. The scent literally filled the air with anticipation for the final course!
Thankfully, this dish was worth the wait. The fish and fennel-onion “confit” were rich and hearty, but the herbs, lemon, and olive tapenade provided acidity and balance.
For those who were unable to enjoy the skate, Chef Howard prepared an equally-appetizing cauliflower curry with freshly-made dosas!
