#EatInPopUp: Food, Fitness & Foolishness!

We had the pleasure of spending this past Sunday with Nicole Sweet and Marisa Thrasher of Fitness + Foolishness for their #EatInPopUp tasting with Chef James. Nicole and Marisa, aka Sweet + Thrasher, organize fitness retreats for everyday people who enjoy healthy, fun, and balanced lifestyles. When it comes to food, we feel the same way. Eating well means more than just eating healthy — your food should taste great, too!

Since most of the Fitness + Foolishness retreats take place in the Caribbean, we were hoping to enjoy some sunshine and fresh air on their friend Kristyna’s rooftop. Unfortunately, the weather didn’t cooperate and we had to bring the festivities indoors. Regardless, we had a fantastic time and enjoyed delicious food with wonderful company.

Sticking with the Fitness + Foolishness theme, we asked the chef to prepare a menu that was light and healthy, yet big on flavor. Chef James definitely delivered, as every dish was a big hit.

First course: Yellow tomato gazpacho with lemon basil

The gazpacho was cool, light, and refreshing — the perfect appetizer for a warm, muggy day in New York. Roasted Anaheim chile peppers brought some heat and awakened our palates for the ensuing courses.

Like all other #EatInPopUp tastings, the menu for this one was a secret. Most guests remarked that they wouldn’t think to order a dish with raisins and capers in it, but loved the relish in this one. Roasted cauliflower and curry always go well together, and the fried shallots brought a very-welcome crunchy element.

Unfortunately, Chef James was unable to find mahi-mahi at the market, but halibut is the next best thing. In addition to the fish, the coconut rice and broiled pineapple took our taste buds on a trip to the tropics.
