There isn't a time in my life when I don't remember cooking.  I decided to turn it into a career when I attended the International Culinary Center (formerly French Culinary Institute/Italian Culinary Academy) where I spent several months in Italy learning Italian cuisine and culture.  After I graduated, I spent five years working in various restaurants throughout the city, including a cheese and wine bar in the West Village where I managed the entire kitchen.  This past summer I worked in the Hamptons as a private chef/catering chef for a small catering company and enjoyed the privated dinners I was cooking for clients since it made food very personal again.  My main focus is trying to use local ingredients whenever possible no matter what cuisine.  I specialize in making housemade pasta and gelato after my training in Italy as well as food from my Greek and Cypriot heritage but am also very comfortable cooking all types of cuisines, including desserts!
